NASI DAGANG dari Malawi





NASI DAGANG dari Malawi (RESIPI ASAL YANGMAZNI)

Ingredients :

4 cups Thai Rice (I used the normal rice)
1 cup glutinous rice (beras pulut)
2 cups thin coconut milk
1 3/4 cup thick coconut milk
3 shallots ~ sliced thinly
2 cm ginger ~ sliced thinly
3/4 tablespoon fenugreek (halba)
1 level tablespoon salt

Method :

1. Wash the rice and soak overnight. Then put them through a strainer.
2. Get the steamer ready. And once the water is boiling, place the soaked rice in a tray, into the steamer.
3. Meanwhile, place the thick coconut milk and salt in a pot and stir till salt dissolves. Add in the sliced shallots, sliced ginger and fenugreek and cook on medium fire for a while....jangan sampai pecah minyak
4. When the rice is half cooked, remove from steamer and pour the thin coconut milk onto the rice and mix well. Place the tray back into the steamer and steam till done.
5. When the rice is cooked, remove from steamer and pour the thick coconut milk and stir to mix. Ready to serve.


GULAI IKAN AYA

Ingredients :

2 pieces of ikan aya / ikan tongkol (I used the canned sardine, I didn't take the sauce)
2 tablespoons chillie paste
3 tablespoon fish curry powder ~ mix with a bit of water to form paste
a bit of palm sugar
salt to taste
2 pieces dried tamarind pieces
5 tablespoons oil
coconut milk

To be grinded :

1 onion
2 garlic
2 cm ginger
2 cm galangal (lengkuas)
a bit of tumeric powder

Method :

1. Cut the fishes to smaller size, clean and put on a colander remove all the excess water.
2. Boil the fishes with a bit of water, salt and dried tamarind. (Add a bit of vineger. It's YangMazni's mom tips to make the fish harder to avoid from breaking when cooked) ( I skip this step because I used canned sardine)
3. Heat oil and add in the chillie paste and the grinded ingredients. Fry till fragrant.
4. Add in the curry paste. Stir.
5. Pour in the coconut milk.
6. When boiling, put in the fish, 2 pieces dried tamarind, palm sugar and salt.
7. Simmer for a while till the gravy thickens and remove from heat.
